I have been working a lot lately, which as most of us know, leaves little to no time to cook quick and easy meals that are nutritious, whole and packed with what the body needs such as protein, fibre, complex carbs, veggies etc.
I have been experimenting with quinoa quite a bit lately as it is easy to cook (takes about 20 mins) and can be mixed with just about anything! Put it into your salads, swap it for pasta or mix it with lentils and you have yourself a hearty meal mix that will get your body pumping properly!

Here is quick recipe for anyone who needs a quick-fix-idea for making something when you are in a rush, dead from working or just too lazy to be creative in the kitchen.
1 cup quinoa (2 cups water)
1 package frozen spinach
1 cup frozen green beans
1 package ground turkey cooked
tomato sauce (I used Classico spinach & florentine)
crumbled low-fat goat cheese (to garnish)
Directions:
Measure 1 cup of quinoa into a pot and bring to boil with 2 cups of water. When at boiling point, lower burner to minimum and put lid on top of pot. Keep at a simmer with the lid on so that the quinoa absorbs water (like rice).
Cook turkey on frying pan and add salt and pepper to season.
Dethaw spinach in a pan, then add beans. Dethaw all, adding sauce last. Mix in turkey.
When quinoa is done, serve in bowl or on plate adding sauce mixture on top. Sprinkle goats cheese on top to liking.
